Wild Garlic grows in abundance this time of year. You might have noticed the gloriously fragrant aroma on your morning walk - it's so distinctive and an utter joy to add to your staple recipes. It works beautifully in pesto or sauces, but my personal favourite - a classic wild garlic butter.
This recipe is a dream slathered on thick toast, or onto ciabatta to create a seasonal garlic bread. For the foodie in your life, you could add a parcel of this delicious butter, along with a jar of homemade chutney and fresh bread, and gift the most wonderful food parcel - you'd definitely be a winner in my eyes.
Makes one block:
250g butter
60-100g wild garlic, freshly picked and hand-washed
1 tsp salt
Handful of parsley (optional)
Finely chop wild garlic and parsley and mix into a bowl, alongside a softened block of butter and salt.
Alternatively, add all the ingredients into a food processer and blitz everything together.
Once combined, lay your garlic butter onto some parchment and roll into a sausage shape to keep in the fridge.
Slab onto fresh toast and enjoy immediately!
