Give these dreamy little teatime treats a go, they're nice and simple and you're likely to have most of the ingredients already. A little nod to St. David's Day, although I'll be whipping these delicious sweet treats up for the foreseeable - they don't disappoint!
225g of self-raising flour
1 tsp baking powder
1 pinch of salt
100g of butter, plus a little extra for cooking
50g of caster sugar, plus extra for sprinkling
50g of currants
1 egg, beaten with 3 tbsp milk
Mix together the flour and salt in a large bowl and rub in the margarine to form a crumbly texture. Then add the sugar and currants and stir in.
Pour the egg and milk mixture in and combine together, until you have a stiff dough
Then you want to roll the dough out onto a lightly floured surface until 5mm thickness. Then stamp out rounds with a pastry or biscuit cutter
Place the griddle onto a medium heat until hot, and grease with a little butter to prevent the cakes from sticking. A heavy cast iron frying pan makes a good substitute if you don’t have a traditional griddle
Cook the cakes until they are golden brown and have risen slightly - about 3 to 4 minutes each side
Serve immediately sprinkled with a little extra sugar (we also added cinnamon to our sugar to sprinkle over the top - not quite tradition, but sure is delicious!)
